A Pompidou Walk to La Pâtisserie des Rêves in Paris

Paris and St Valentine are a couple that go hand in hand, don’t they?

This past couple of weeks, in between steely, dreary days and an unrestful flurry of snow, the sun has popped out to say bonjour.  Passing the Hôtel de Ville, I found myself reaching for giant floating hearts. Bubbles were in the air.

For the romantic ice-skaters amongst you, the ice rink or patinoire at the Hôtel de Ville will remain open until 1 March 2015.

Instead I was walking to the Centre Pompidou to meet up with a visiting friend from Provence with the most contagious, lilting sing-song accent.  Did you know that the Centre Pompidou has been open to the public since 1977 and owns the biggest collection of modern and contemporary art in Europe?  Its contemporary tubing exterior is also arty symbolic: red for circulation, blue for air and green for water.

There’s been a lot of hype around the Jeff Koons exhibition there, “The Retrospective”. It’s at the top floor of the Pompidou Centre and is running until 27 April 2015. Personally, I found this a highly different cup of tea to swallow. Industrial hoovers, adverts, basketballs floating in glass cases, a porcelain statue of Michael Jackson sitting with a monkey? I just didn’t get it. Balloon Dog and Hanging Heart look as light as balloons but they each weigh about a ton in stainless steel.

A heavy heart indeed!

Being on the 6th floor, you’ll love looking out over the surrounding rooftops of Paris. It’s a great place to come to see breathtaking views. I had one thing on my mind: where we could venture out nearby. After all, it was time for tea! There’s restaurant Georges on the top floor if you wish to splash out (stunning red roses were on every table) but for a teatime goûter, there are so many pâtisseries to choose from around here, especially along rue Rambuteau (more on that another time – especially as I have many more suggestions in my forthcoming book, “Teatime in Paris“). Since it was rather cold and the end of the sales in Paris, I had a sweet idea.

Walking down Rue du Renard (fox street) towards the Hôtel de Ville, we turned left into rue de la Verrerie and headed less than a couple of short blocks to the BHV store (Bazar de l’Hôtel de Ville), a Parisian institution.

Heading for the 3rd floor, it was time for tea and pastries at the Pâtisserie of dreams, La Pâtisserie des Rêves.  Pastry chef, Philippe Conticini, dreamed up his first concept pastry boutique in rue du Bac in 2009. He now has six boutiques in the Paris area – and has also opened in London and Japan. The Parisian tea salon in BHV is the latest to have opened in July 2014 – and admittedly I checked it out last summer with Mardi Michels (blogging friend of Eat.Live.Travel.Write fame). Each summer I meet up with Mardi, it’s Champagne flutes rather than teapots, dahlinks. When in Paris, I love it when Mardi goes for the pink bubbles – and in this case, it perfectly matched the Pâtisserie des Rêves décor!

Check out these teapots. It was like drinking from an oversized doll’s tea-set. That’s Philippe Conticini’s concept: to evoke memories of sweet childhood. Now that’s more like creating memories; imagine this coffee éclair, wrapped in caramelised chocolate?

Even the simple jug of water is classy. I don’t normally drink much water but the touch of lime zest made it actually taste pleasurable!  This is the first time I’ve tasted his éclairs.  Don’t judge: I normally go for the ongoing fabulous classics: the Saint Honoré, Paris-Brest and oh, his tarte au citron meringuée

There are many more to choose from. Through my tastings over the years, many of his pastries are slightly sweeter than most. Funnily enough, Conticini is one of the rare pastry chefs that doesn’t do macarons. I’m certainly not complaining; there are plenty more exquisite pastries to choose from including limited editions, according to his creative whim and delicious seasonal fancy.

On Wednesday, children are the focus of dreams here. As there are no French school classes in the afternoon to enjoy extra-curricular activities, this is the favourite form of workshop.  When we were there, there was a crêpe party for them with plenty of the well known rose-pink balloons.

My tea may have been an ephemeral moment in Paris but my sweet tastings from La Pâtisserie des Rêves happily continue at the boutique in Parly 2, our shopping centre near Versailles for us who live out of Paris. I’d better hurry up and order his special Valentine’s cake for two with raspberry and lemon mousse, although please don’t tell Antoine I tried it, haha. Proof is the girls and I tasted even more pastries this week. I’ll have to write another post!

Honey Lemon Sablé Biscuits

Honey Lemon Sablé Biscuits were just asking to be baked. It was a sign: Corsican lemons poking out from an oversized basket, stuck to their prickly leaves. I filled a large bag and, dreaming at the Monoprix checkout, thought about my favourite lemon and passion fruit meringue tart I could make with them. Corsican hubby would be pleased.

Then Lucie suddenly came down with a virus all last week while Mummy bear tried to calm her scratchy throat and racking cough with hot lemon and honey drinks. Finally when the fever subsided after a few days, it was my turn for the symptoms; then Antoine; like crashing dominoes, we were. The lemons didn’t make it to dessert mode – instead these easy Honey Lemon Sablé Biscuits.

The oversized jar of honey, bought from the market at Apt last summer, was also our best medicine. Miel de Garrigues, or honey from the Mediterranean coastal regions from such typical wild shrubs as lavender, thyme, sage, rosemary was the perfect soothing addition to drinks, yoghurts and to coat our favourite weekend brioche (thank you, freezer!).

Feeling sorry for myself (I’m a typical Aries – I’d hate to live with me), I felt the love circulating via friends with hints on the best remedies on Facebook – thank you!  Now I’ve discovered Rooibos, that has really helped.

However, I’ve also been thinking about the new website, and so Jérôme’s suggestion, “More egg yolk recipes?” was also welcome. I’ve gradually been building up a list of yolk recipes and you’ll be happy to hear there are plenty more waiting for you in my forthcoming book, Teatime in Paris. Meanwhile I’m adding more to the list here on le blog.  After all, we are mad about macarons, and we need to use up these yolks tout de suite.

Luckily I hadn’t lost my appetite. Come teatime this weekend, the end of the honeypot was looking rather concrete and unappetising.  With only a few seconds in the microwave, the last of the liquid nectar was just too good to down all in one go, so I found these biscuits on the internet.

I say biscuits with my Scottish accent, my American friends call them cookies, the French call them sablés, so what on earth was I supposed to write as a title?  Incidentally, the French refer to them as sablés since as you mix the butter and flour together with your fingertips, it resembles sand (our breadcrumbs reference). Crumbs; isn’t that fascinating?

Honey Lemon Sablé Biscuits

Recipe slightly adapted from 750 grammes French website for Petits délices au miel.  I reduced the sugar slightly and added a pinch of salt. I used a stronger honey (like mountain honey) which flavours the biscuits beautifully.

Makes about 40 sablés (depending on the size of your cookie cutters)

Preparation Time: 10 minutes
Resting Time: 30 minutes
Cooking Time: 10 minutes

250g / 9oz plain flour
60g / 2.5oz sugar
130g /4.5oz softened butter (unsalted/doux)
2 egg yolks
2 tsps lemon zest (unwaxed)
3 tbsp runny honey (Accacia)
pinch salt

1. Measure the flour in a large bowl.  In the centre, add the sugar, softened butter, lemon zest, honey and salt. Mix all together well with the tips of your fingers until the mixture resembles breadcrumbs (or sand – sable – as the French say) then add the egg yolks.
Alternatively, if you have a stand mixer, mix all the ingredients together for a couple of minutes maximum until well blended together.

2. Split the dough into 2, cover with cling film and set aside in the fridge for 30 minutes.

3. Preheat the oven to 170°C/150°C fan. Remove the dough from the fridge and film and roll out with a rolling pin to about 5mm thickness.  Cut the dough using your favourite cookie cutters.  Put the biscuits on a baking tray covered with parchment paper or a Silpat mat.  Bake for 10 minutes.

4. Leave the cookies to cool on the tray for a couple of minutes (this will make it easier to remove them) then cool on a wire rack.

I was planning on coating them with a ginger and lemon glaze but after having tried the first ones, I can honestly say they don’t need any fancy toppings.  They are delicious and tasty enough on their own. Although don’t forget the tea! Serve with lemon tea – or why not a warming pot of Ginger Rooibos tea?

Breakfast in Paris with ParisBreakfasts for Teatime?

“Let’s meet at Yamazaki for breakfast and we can talk shop.”

Can you imagine this exciting moment: a meet-up with watercolour artist, Carol Gillott? If you’ve been following le blog you’ll remember Carol, of ParisBreakfasts fame, and you’ll know just how much I adore her wonderful sketches and watercolours of sweet treats and Parisian dreams.

This was our first meeting at the end of October to talk about ze project.

We certainly did talk shop; like pastry shops, particularly pâtisseries in Paris and favourite afternoon treats, over large cups of café crème.

Yamazaki is one of my personal favourite French pâtisseries with a Japanese twist in the 16th Arrondissement Paris.  There are more pâtisseries like this (and restaurants) opening in Paris (with Sadaharu Aoki being most well known) but this small boutique and tea room, at the Chaussée de la Muette, is where I popped in most often, as I worked around the corner for ten years. I wonder how many kilos of breakfast croissants that represents, plus light pastries for many an afternoon treat, or French goûter around 4 o’clock teatime… but I digress.

Teatime.  That’s a word you’ll be hearing more of here.  Why?

My next book is called “Teatime in Paris!” and will be released on 7 May 2015.  It may seem a while away but, believe me, each teatime will fly by and before we know it, the big day will be here!

In the meantime, there’s still a lot to do.  There’s the re-look of this website to welcome it for a start.  My wee head is spinning with so many ideas for you on le blog, not to mention all the photos to catalogue that I’ve taken for the book.  I did a count the other day and there are nearly 300 images!  Not forgetting the recipes, the whole point of the book!

At our next meeting at ParisBreakfast HQ, Bear showed off some of Carol’s sketch letters from Paris as we were talking about Teatime – he even whispered word that she has a new Valentine’s sketch letter.  I couldn’t think of a more perfect artist to conjure up the Parisian pâtisserie magic to finish off the look and feel of this exciting new book. Oh, I can’t wait to show you it all now!
