This is such an easy starter. You’re basically replacing the pastry with cornflour, so they are gluten free. Prepare the mix earlier in the day and chill until needed. Jill, the macaron recipes in your book are FANTASTIC! I'd tried to make macarons in the past and they never turned out quite right - either they were too hard, cracked, didn't come off the baking tray or whatnot.
